MADEIRA cake originated in the 1800's when it was paired with Madeira wine. Madeira cake is a firm cake, but light in texture with a lemon flavour, normally from lemon juice and zest. People normally slice Madeira cake and enjoy it with tea or coffee. It also makes the perfect base for a layer cake or even trifle, why not serve with a dusting of icing sugar or a drizzle of glacé icing to create a version of a lemon drizzle pound cake.
